Red Curry
- 1.5 pkgs tofu, chopped in pieces appropriate to your mouth size
- 2 tablespoons cooking oil
- 2 tablespoons red curry paste
- 2 green onions, chopped
- 2 small onions, chopped
- 3 cloves garlic, chopped
- 1 teaspoon fresh ginger, grated
- 2 cups coconut milk
- 2 tablespoons hoisin sauce
- 1 tablespoon dark soy sauce
- 2 tablespoons white sugar
- 1/2 cup cilantro leaves
Heat oil in a medium pot and fry onions with heat on medium (both green and otherwise) for 5 minutes. Add garlic and fry for another 2 minutes. Add the remaining ingredients and drop heat down to low. Cook for 10 minutes. Serve over rice.
